Ingredients:

3 Ripe Bananas

2 Fresh Eggs

300 Grams of Flour

1 Teaspoon of Baking Soda

1 Pinch of Salt

1 Vanilla

2 Tablespoons Extra Native Olive Oil

100 Grams of Honey or Sugar

First of all, you need to preheat your oven to 175ºC / 350 º F, so do that first before starting to prepare the banana bread. Now, mash the bananas with a fork, open the eggs add them to the mashed bananas and mix them well.

Add honey or sugar to the mass and add bit by bit the flour. Don´t add all the flour at once, it will be harder to mix the ingredients.

What I do is sieving the flour to avoid having clots so the bread gets softer. Add the baking soda, the pinch of salt and the vanilla, go on adding the rest of the flour and 2 tablespoons of extra virgin olive oil. Make sure to mix well the ingredients and wait for 10 minutes before putting the mass into the baking pan.

The higher the pan the thicker the bread will be. Bake it for about 45 minutes and do the tooth stick test!  Plunge the bread with the tooth stick and if there are no mass sticking on it, then the bread is ready.

All you need for this delicious recipe is:

3 Ripe Bananas

200 Gram of Whole Wheat Flour, Rye, or Spelt.

1 Teaspoon of Cinnamon

100 Gram of Mashed Apple

1 Pinch of Baking Soda

2 Eggs

50 Gram of Nuts

Preheat the oven to 180 ºC / 356º F. Take out the inner part of the apple and grate it with the rasp. Mash the bananas with a fork and mix them with the grated apple.

Open the eggs and add them to the apple–banana mix. Add bit by bit a part of the whole wheat flour and sieve it to avoid clots in the mixture. Add the baking soda, the cinnamon and mix it all very well.

Now you can add the crushed mixed nuts and put the mixture into a baking pan. Now you can put it into the preheated oven and let it bake for about 45 minutes. Make the tooth pick test again! Before serving and eating the bread you should wait till it cools down completely. This is the case for every bread and cake, not only this one.

You can get bellyache because of a bacteria called Lactobacillus bakus which is active at temperatures over 25ºC / 77ºF. The bacteria falls “asleep” below that temperature. Just wait for the bread cooling down and you will be fine.

The bread will stay fresh for about one week, after some days it tastes even better as the aromas are better absorbed. You can freeze it also. You can even put the mass into a muffin form, your kids will love it!

  3. My wife and I love banana bread and she wants us both to get more in trim so this sounds right up our street.

    My preference is ripe bananas, we’re not too keen on them when they are green, as you say, ripe ones are more easily digested and don’t contain as much starch.

    This banana bread sounds a really good use up too, for those that have become over-ripe. We’re using everything up nowadays as we’ve purchased a juicer that mixes all the older greens and fruits into a delightful drink.
